Reblochon du Jura - Le Prefere des Montagnes

Reblochon du Jura aka Prefere des Montagnes: soft washed rind cheese from Jura Mountains in France; made with pasteurized cow’s milk. The cheese is washed with brine during aging to preserve moisture and favors development of natural bacteria. The resulting orange rind develop white mold upon slowly drying. It has a slight pungency however the paste is supple and creamy, with pleasantly floral, sweet and milky flavors. This cheese can be thought of as a pasteurized version of Reblochon de Savoie, a famous cheese from the French Alps which is made with raw cow’s milk and which we sadly cannot import in the USA.

Buche de Chevre Frais

soft, rindless goat cheese in a log (“bûche” in French) shape. Made with pasteurized goat’s milk, 20% milk fat content with a delicate texture. Each log is individually molded by hand, following an artisanal process. This results in a beautiful finish and a quality product. This Buche de Chèvre is characterized by mild and bright goat’s milk flavors with lemony notes. Great cheese spread on a fresh baguette or crumbled on a salade verte.

Le Chartreux

Mountain cheese from Savoie, made near La Grande Chartreuse Mountain in the French Alps. The raw cow’s milk used to make this cheese is from high alpine pasture, which become covered with wildflowers in spring and summer. The ivory paste shows striking tiny holes. It is supple, melting, creamy with a long, browned butter and beefy notes finish. Le Chartreux is a great table cheese and a fine melting cheese for fondue or raclette recipes. It is cave aged over 4 months and develops a rustic natural rind during aging. The cheese label shows a cat of “Le Chartreux” breed. These cats with a particularly beautiful blue grey robe were brought back from the crusades by knights who left them in the care of Carthusian monks in the monastery of La Grande Chartreuse in Savoie. They became renowned as useful barn keepers as rodent predators and great pet companions. This cat breed has since flourished and has been preserved through the ages.

Trois Laits means three milks. This cheese originates from the Couseran Valley in the Pyrenees mountains of France. It is made with pasteurized sheep + cow+ goat’s milks. Trois Laits is a large “Tomme” style cheese, with a rustic natural orange rind with streaks of white molds picked up from the aging cave environment. This cheese preserves well and is suitable for long aging on spruce planks, with strength of flavors and complexity inching higher and higher over time. Trois Laits has complex and balanced milky, buttery, nutty, herbal flavors and a supple, creamy, ivory paste aerated with tiny holes. Made with pasteurized sheep + goat + cow’s milk; aged 3-4 months, natural rind.

Mimolette Tendre Fermiere

This is a farmstead, raw cow’s milk Mimolette, hand made by La Ferme du Vert in the northern Pas –de-Calais region of France. The ancient recipe of this cheese originates from the Netherlands and it was later introduced and produced in France. Mimolette has an original spherique shape. This Mimolette is called “tendre”, meaning tender, as it is only aged for a few months and has a softer, creamier texture than aged Mimolette which can sometimes be as hard as a rock. Also, it is made with whole, raw milk and has a higher fat content then industrial production Mimolette which is made with skimmed, pasteurized milk. Mimolette Tendre Fermiere has a natural beige and grayish rind from aging on wooden plank. The orange paste comes from annatto natural coloring. This is a true farmstead cheese, made with raw cow’s milk collected on the farm, and revealing complex nutty and buttery flavors.
