Heathen Toffee

4.5 oz. We make our toffee from scratch: a slowly-cooking syrup, a closely-monitored temperature. Toasted almonds stirred in at just the right temperature, then we carefully pour it out, let it cool, crack it into bite-sized pieces and send them on a ride through our enrobing machine which gives them a thin shell of dark chocolate to seal in crispiness and add another layer of flavor. More toasted almonds are added as a garnish while the chocolate is still warm and there you go.

Thyme caramel with sea salt and preserved lemon caramel: garnished with amazing lemon-infused flaky sea salt. Maple pecan caramel: made with local maple syrup and homemade pecan butter, these are smooth, intensely nutty, and ridiculously good. They’re what i (lagusta!) snack on when i’m working late nights. Strawberry-balsamic caramel: a cross between a pâté de fruit and a caramel, zingy with the electric undercurrent of balsamic, marvellously fruity with masses of local strawberry purée.

Maple Honeycomb

3 oz. Typically honeycomb candy is made with honey, to underscore the honeycomb look of the toffee, but we used local deep dark concentrated maple syrup, which is so much more Hudson valley-y anyway. When it’s cool we break it into bite-sized pieces and enrobe it in dark chocolate. For sure, this is one of our more sugary candies, though the bittersweet chocolate coating tempers it nicely.
