Vegetarian Fajitas
We saute in butter and grill a mound of bell peppers, red peppers, poblano peppers, cilantro, zucchini, red onions, mushrooms, and tomatoes. Then rush them to your table still sizzling. We serve it all with rice, fat-free beans, lettuce, cheese, fresh guacamole, sour cream and your choice of corn or flour tortillas.
