Beaulieu Vineyard Cabernet Sauvignon Napa Valley 2016

15 months in a mix of French, American and European oak (30% new), its saturated purple color is followed by a solid bouquet of blackcurrants, smoke tobacco, and graphite. It’s medium to full-bodied, forward, and supple, with sweet, moderate tannins, and is completely satisfying . The deep roots of Beaulieu Vineyard were first planted back in 1900, when founder Georges de Latour noticed similarities with his native Bordeaux and declared the Napa Valley ideal for winemaking. He followed up on this belief by planting vineyards in Rutherford with grafted, phylloxera-resistant French vines. The Cabernet Sauvignons that de Latour crafted from these grapes gave the world its first taste of California�s promise as a world-class winemaking region. In 1938 de Latour hired the young Russo-French enologist Andre Tchelistcheff, who would become California’s most distinguished winemaker. Tchelistcheff’s knowledge of traditional French techniques and willingness to experiment in local conditions brought BV the Grand Sweepstakes Award at the Golden Gate International Exposition, and led to the creation of Napa Valley’s first reserve wine, Beaulieu Vineyard Georges de Latour Private Reserve Cabernet Sauvignon.

Eden Heritage Cider Cans NV

Eden began on a trip to Montréal in 2006 when founders Eleanor and Albert Léger first tasted ice cider and wondered why nobody was making it on our side of the border. In April 2007, they bought an abandoned dairy farm in West Charleston, Vermont and got to work, never once cutting corners to try and please anyone for a quick profit. All of the apples come from their own Eden Orchards, where they grow over 35 varieties biodynamically, as well as seven other local orchards the Léger's work with in long-term partnerships. Eden works with traditional New England heirloom varieties, local seedling varieties, and Old World varieties, including bittersweet cider varieties that originated in France and England. They use the natural winter cold at the farm to concentrate the flavors and sugars of the apples before fermentation. The highest concentrated juice is used to make their ice ciders (it takes over 8lbs of apples to make one 375mL bottle of ice cider!). Lesser concentrations form the base for the Orleans apéritifs and their naturally sparkling ciders. No sugar, colorings, acids, or industrial flavorings are ever used. These are true ciders that reflect the cold winter climate and apple heritage of Northern New England. Made from a blend of heirloom aromatic and tannic cider apples (Kingston Black, McIntosh, Empire, and Bulmer's Norman Gravenstein) sourced from orchards around Vermont as well as in Eden's own biodynamically farmed orchards. Harvest pressed and cold fermented with no sugar, colorings, acids, or industrial flavorings, and no added sulfur.

Julia & Navines Cava Brut Nature Organic

Highlighting the Perellada and Xarel-lo grapes with a light addition of Macabeo, this Cava is drier and more complex than the Brut and Brut Rosé. Fermentation occurs in temperature controlled tanks for the base wine. Secondary fermentation occurs inside the bottle, and the wine is left on the lees for a minimum of 15 months, qualifying it as a Reserva. It is dry with zero dosage. The estate is located in the town of Font Rubí in Alte Penèdes, the area most uniquely suited to growing grapes for sparkling wines in Penèdes. There limestone soils produce wines with minerality, texture, and length. With vineyards on the estate as high as 350m, the temperature difference between day and night allows for a longer growing seasons which brings more aromatics and freshness to the finished wines. Of course, the estate farms organically and only uses estate grown fruit. For the Brut and Brut Nature bottlings, the classic blend of Parellada, Xarel-lo, and Macabeo form the cépage, while a small parcel of Pinot Noir has been planted for the Rosé. The goal of the winemaking at Julià & Navinès is to translate the Alte Penedes terroir directly into the bottle. Harvesting is done by hand, fermentation of the base wines occurs in temperature controlled tanks, and the wines are aged on the lees in bottle from 14-18 months. The house style represents the bright fruit flavors of the region along with sparkling acidity and a fine mousse. The wines of Julià & Navinès prove that Cava can be exceptional, reasonably priced, and organic.

Patrick Piuze Chablis Terroir de Fye 2019

Fyé comes from a 2.5 hectare parcel surrounding a little chateau that you can see from the top of the Grand Cru hill near the subclimate, Chapelot in 1er Cru Montee de Tonnerre. This vineyard sits just opposite Blanchots. Fermented and aged entirely in stainless steel tanks. Fyé is characterized by floral aromatics and ripe pit fruit on the palate.

Domaine du Margalleau Vouvray 2018

The soils are composed of granite and volcanic ash, and his vineyards are located at approximately 1800 feet altitude. Sommos Premium Las Bas Somontano 2009

Elegant and complex with a long finish. Nestled in the foothills of the Pyrenees mountain range, in Somontano, the Las Bas vineyards are some of the northernmost in Spain. Located at 1,300 feet above sea level, the winery is a beautiful meeting of traditional and modern. Great care is taken with the fruit from harvest to vinification. The grapes are harvested at night to avoid the heat and transported to the winery in airtight containers, to guard against temperature variations and environmental contamination. Once they arrive at the winery, the grapes are carefully unloaded to avoid being crushed. Finally, the winemaking hall is over 88 feet tall, allowing all movement of the grapes, must, and wine to be accomplished by gravity. The region is perfectly suited to the cultivation of vines. It enjoys a continental climate, sheltered by the Pyrenees Mountains from cold, northern winds. Nonetheless, summers are hot and winter freezes are common. The soil is poor in organic material, with good drainage and the temperatures fluctuate significantly between night and day. “Somontano” can be translated as “under the mountain”, as the region sits in the shadow of the foothills of the Pyrenees. The area has been planted with vineyards since Roman times, around 500 B.C. Approximately 120 miles from the border with France, Somontano became home to many French winemakers during the 19th century, who brought their own vines with them.

Domaine Philippe Garrey Mercurey Premier Cru Clos du Paradis 2017

Vigneron Philippe Garrey’s is the 6th generation to live on and care for his family’s Estate in the southern end of the Mercurey appellation. In 2011, his was the first Estate in the Côte Chalonnaise region to receive biodynamic certification from Demeter. He was attracted to both the philosophy behind biodynamic farming and the results, having been impressed by biodynamic wines he tasted. Philippe farms his entire 4.5 Ha property of old vines (60-100 years old) by himself. Unlike neighboring Estates, he has no interest in expanding his vineyards, preferring to remain a scale he can care for singlehanded. In the vineyard, no chemicals of any kind are used and the rows are grassed over. Only natural fertilizers (green manure) and treatments of the vines (infusions of nettle, chamomile, etc) are used. Laborious, hands on care is taken along every step of the way from field to bottle. Harvest is done by hand, into small crates, with a strict in-field selection for the grand cru wines. In the winery, spontaneous fermentation occurs with native yeasts. Finally, the bottling is done by hand, with gravity, 6 bottles at a time. Philippe even takes care than the bottles, corks and wines are all at the same temperature at the time of bottling, to ensure it the most gentle process possible. Philippe wants his wines to be an honest expression of his family home. Through laborious, attentive work, he achieves this goal, producing aromatic wines of minerality, purity and finesse. Despite his small size, his wines have had made an outsized impression. Decanter named him as one of the best growers of the Mercurey appellation and his wines have been featured at several Michelin star restaurants in Paris.

"Orange Wine"

San Vitis Trebbiano “Orange” Lazio IGT 2016

San Vitis is a project of three friends who came together to revitalize the traditional grape growing and winemaking techniques of Lazio in the town of Olezano Romano. As such, they've replanted indigenous varities like Bellone. Farming organically, their 10 hectares will be certified in 2020. The first vintage produced was 2015. Today they work with the very talented Danielle Proietti of Abbia Nova to produce wines that are at once traditional and delicious. When we tasted their 2016 Trebbiano, a wine which gets its dark straw color from 3 days of whole cluster maceration, we knew we had to work with them. This Trebbiano comes from 40 year old vines farmed organically at 180m on sand and silt soils. Harvested in the first week of September, whole clusters ferment with native yeasts in tank with maceration for 3 days, resulting in an orange wine. Malolatic fermentation occurs naturally. The wine is kept on the lees for 8 months in tank and bottled with minimal sulfur.
