Two enchiladas with cheese, chicken, shredded beef or carnitas and one of the following traditional sauces. Rojo – a flavorful mild red sauce made from guajillo peppers. Mole – a rich, dark sauce made with seven kinds of peppers, Mexican chocolate, nuts, and spices. Verde – a spicy green sauce made with tomatillos, jalapenos and serrano peppers.
