We start by mixing organic Virginia peanut butter into our sweet cream base. We then make a brittle of caramelized sugar with peanuts and Askinosie single plantation cacao nibs. Finally, we make an Italian-style meringue (think fancy marshmallow fluff), and fold it along with the crumbled brittle into the slightly salty peanut butter ice cream.

The beans are cured in the sun concentrate flavor, then cold ground and steeped in our rich custard base. Vegan Planet Earth Pint

To make Vegan Planet Earth we blend almond extract into our vegan ice cream base for flavor and add spirulina, a super nutritious fresh water aquatic plant, for color. Spirulina’s flavor is neutral. Meanwhile, in the pastry kitchen we bake off fluffy and delicious matcha green tea cake made with Kettl Tea matcha powder sourced directly from the best tea plantations in Japan. This flavor was partially inspired by a classic midwestern ice cream that is bright blue. It’s called blue moon and is made with artificial coloring. In Malta in Southern Italy they make a similar ice cream called smurf ice cream. Kettl sources directly from top growers in Japan. The tea is shaded for the last 20 days before harvest which tricks the plant into producing super flavorful antioxidants. Once harvested it is steamed which brings out the brilliant green color. It is then dried and ground into a fine powder on tiny stone mills that grind very slowly (only 40 grams per hour!) to preserve flavor.
