Short Pasta

- Garganelli PastaMade and cut by hand and organic non-GMO flours and organic free-range eggs. This quill-shaped pasta tubes with ridges are made from flat squares of pasta that have been rolled, corner to corner, and with a wooden stick over a special comb called a pettina. Garganelli are traditionally served there with shreds of braised poultry, a bolognese sauce, or any fine ragù that can be trapped within the tubes.
