Directions: simmer: cooking directions: add 1 package (10 oz.) wel-pac japanese udon noodles to 6 quarts boiling water. return to a boil. reduce heat to low. simmer uncovered, 13 to 14 minutes, or until cooked to desired tenderness. drain. rinse with cold water to cool; drain well. to serve hot: heat cold noodles by plunging into boiling water 1 minute; drain. divide noodles into serving bowls. mix 1 part kikkoman memmi (soup base for noodles) with 12 parts hot water; pour over noodles. sprinkle with finely chopped green onions, as desired. or, top with tempura, cooked beef, pork or chicken slices and pieces of cooked vegetables. to serve cold: dip noodles into a sauce prepared with 1 part kikkoman memmi mixed with 5 parts cold water
