Grace Johnny Cake Fried Dumplings Bakes (9.5 oz)

1. combine 9.5 oz (270g) grace johnny cake mix with 2/3 cup milk. add a little milk at a time until a firm dough is formed. (set aside a small amount of the dry mix for use during hand kneading). 2. add more milk as necessary. 3. divide dough into 16 balls, approx. 1-1/2 tbsp each. 4. knead each one with floured hands for a few minutes. 5. press gently with palm of hands and flatten to 3 inch rounds. 6. fry in oil. drain and serve hot. yields 16, 3 inch johnny cakes. ideal accompaniment for any caribbean breakfast including ackee and saltfish, also try wrapping the dough around cheese, peanut butter, apple, chicken or your favourite food, to make a delicious snack.
